Prep time: 1 hour (Yields 24 cupcakes)
Cake:
1 cup butter
4 oz. german baking chocolate
1 cup cocoa powder
1 ½ cups + 2 T. flour
1 teaspoon baking soda
1 ½ teaspoon baking powder
½ teaspoon salt
4 large eggs, room temperature
1 cup sugar
½ cup packed light brown sugar
2 teaspoons vanilla extract
1 cup buttermilk
Coconut Frosting:
1 cup evaporated milk
½ cup butter
1 cup sugar
1 teaspoon vanilla
3 egg yolks
1 ½ cups coconut shreds
Foster Sauce (optional):
½ cup butter
1 ⅓ cups dark brown sugar
7 tablespoons Jack Daniels
3 teaspoons vanilla extract
1 teaspoon ground cinnamon
Instructions:
- Preheat oven to 350 degrees. Line a cupcake pan with paper liners and set aside.
- Melt butter and baking chocolate together in microwave safe bowl or over stove top. Cool slightly. Stir in cocoa. Set aside.
- Add eggs to a mixing bowl and beat for one minute. Add brown sugar and beat until thick and creamy. Add vanilla.
- In a separate bowl, combine flour, baking powder, baking soda, and salt.
- Pour in melted chocolate into egg mixture. (Be sure it is not too hot, don’t scramble eggs.)
- Add half of the flour mixture and half of the buttermilk. When combined, add remaining flour and buttermilk. Beat on medium speed for 2 minutes.
- Fill cupcake liners ¾ full.
- Bake for 18 minutes or until a tester pulls out clean. Cool completely.
For frosting:
Add evaporated milk, sugar, butter, and egg yolks to a saucepan. Whisk to combine. Cook over medium low heat until thickened, stirring constantly, about 10-12 minutes. Remove from heat and stir in coconut, pecans, and vanilla. Cool for 10 minutes.
For sauce:
In a saucepan, combine all ingredients and cook over medium heat until sugar dissolves. Remove from heat.
- When cupcakes have cooled, hollow out middle, about ¼ way down.
- Fill each with frosting.
- Spoon the sauce over top of cupcake and garnish with coconut.
